Boiled potatoes with tomato and spring onions
Very simple and healthy food! This is definitely a tasy and healthy recipe for lazy people! I will prove this to you in the next few lines. You can add as much of the ingredients you like into whatever (almost) proportion. There they come:
- baby potatoes or organic potatoes (NOT baking potatoes)
- organic tomatoes (at least go for vine tomatoes)
- spring onions (optional)
- salt, pepper, oregano, olive oil
- salty cheese (I prefer feta of course)
Step 1: Cook the potatoes
- If using baby potatoes, you don’t have to peel them. Using a small knife simply cut off the parts where the potatoes look rotten or hit. If using usual potatoes, better peel them because their skin is usually thicker.
- Add into the pressure cooker water, salt and few of pepper and wait until it boils.
- Add the potatoes and close the lid. The water should cover the potatoes.
- Use the pressure cooker’s manual to estimate the cooking time. It should be around 10 minutes.
Step 2: Slice the tomatoes, spring onions and enjoy!
- When the potatoes are cooked, drain them.
- Add as many of potatoes, tomatoes and spring onions you wish.
- Season with salt, pepper and oregano to taste.
- Add olive oil. You can be generous, since potatoes tend to absorb it.
Enjoy with Nan-bread or French baguette and a glass of white wine!
Note: Instead of cheese you can use olives. Preferably use black Kalamata olives.
