Boiled potatoes with tomato and spring onions

Very simple and healthy food! This is definitely a tasy and healthy recipe for lazy people! I will prove this to you in the next few lines. You can add as much of the ingredients you like into whatever (almost) proportion. There they come:

  1. baby potatoes or organic potatoes (NOT baking potatoes)
  2. organic tomatoes (at least go for vine tomatoes)
  3. spring onions (optional)
  4. salt, pepper, oregano, olive oil
  5. salty cheese (I prefer feta of course)

Step 1: Cook the potatoes

  • If using baby potatoes, you don’t have to peel them. Using a small knife simply cut off the parts where the potatoes look rotten or hit. If using usual potatoes, better peel them because their skin is usually thicker.
  • Add into the pressure cooker water, salt and few of pepper and wait until it boils.
  • Add the potatoes and close the lid. The water should cover the potatoes.
  • Use the pressure cooker’s manual to estimate the cooking time. It should be around 10 minutes.

Step 2: Slice the tomatoes, spring onions and enjoy!

  • When the potatoes are cooked, drain them.
  • Add as many of potatoes, tomatoes and spring onions you wish.
  • Season with salt, pepper and oregano to taste.
  • Add olive oil. You can be generous, since potatoes tend to absorb it.

Enjoy with Nan-bread or French baguette and a glass of white wine!

Note: Instead of cheese you can use olives. Preferably use black Kalamata olives.
