Pork leg with peppers in the oven

Here comes a delicious recipe! As with most meat, a pressure cooker will prove handy. What we need follows:

  1. 500gr. “clean” pork leg (without fat, skin) cut in egg-sized pieces
  2. olive oil
  3. half a glass of wine or brandy
  4. mushrooms (optional)
  5. salt, pepper, oregano, thyme
  6. 2 medium peppers (preferably green, but feel free to experiment)
  7. 2 medium tomatoes
  8. 1 tablespoon tomato puree (optional)
  9. 200gr. salty hard cheese (feta, cheddar, etc.)

Ok, they seem too much, but the recipe is much simpler. There it goes…

Step 1: Prepare the pork

  • We rinse the pork pieces and let them drain.
  • We heat the oil in the pressure cooker and we add the pork pieces.
  • We sizzle the pieces into the cooker until they brown. If not all pork pieces fit in the cooker at once, we sizzle few of them, put them into a plate, sizzle another few of them, etc.
  • When all of them are done, we put them in the cooker and add half a glass of white wine. Wine helps take its smell out (instead of wine we could use brandy). We also add salt, pepper, a few of oregano and plenty of thyme. As soon the wine gets evaporated, we take the pork pieces out and leave them into a plate.

Step 2: Cook the pork

  • Slice the mushrooms and add them into the cooker. Add some water. (If the mushrooms are canned just add them with their own brine). Let them boil for a couple of minutes. Add again, salt, pepper, a few of oregano and thyme.
  • Add again the pork and add enough water so that the whole pork is covered. Close the pressure cooker and let it cook for around 20-25 minutes.

Step 3: Mix them in the oven (30 mins, 220 degrees)

  • Meanwhile slice the peppers vertically. Each slice should be a finger’s size thick, but no thicker than that. Distribute them evenly in the tray.
  • The pork is ready now. Add it into the tray, first the pieces and then its stock.
  • Cut the cheese into small cubes and spread them evenly into the tray.
  • Chop into small pieces both tomatoes. Spread them on top of the pork and the cheese cubes.
  • If you have tomato purée, dilute one tablespoon into half a glass of hot water and add it to the tray.
  • Add the tray into the preheated oven. Leave it for around 30 minutes or until the cheese melts.

Can be served with rice or fried potatoes, and of course, white table wine! Enjoy!
